100% of the olives for this Olive Oil, of the Ogliarola, Coratina, Leccino and Picholine variety, are harvested by hand on the Masseria sottomasi, partly from the mighty “Secolari”, the centuries-old olive trees that only exist in Apulia.
The olives are cold pressed in modern presses. Little air contact, clean filtering and careful filling guarantee the required quality and entitle to the designation “extra vergine”.
sottomasi olive oil is a pure natural product and can vary in color and taste. A certain bitterness and sharpness are characteristic of good olive oil.
